How To Make Basic Chocolate Shortbreads

These shortbreads are easy to make and perfect for a chocolate lover's cookie jar. They are a custard- based cookie with vanilla and chocolate to give them a punch of chocolate flavour. The custard base gives them a soft, fluffy texture that makes the chocolate shortbreads easy to munch on!

Every cookie jar needs some chocolatey goodies to reach for! These are some of my favourites - they're chocolatey, fluffy, and delicious. Yum!



What you need

170g softened butter
1/3 cup icing sugar
55g custard powder
170g plain flour
1 tablespoon cocoa powder
1 teaspoon vanilla essence

How to make it

Preheat the oven to 160C. Lightly grease a baking tray with some canola spray or butter.

In a mixing bowl, place the butter and icing sugar. Use a wooden spoon to mix these together until creamy. Alternately (and to get the job done faster), use an electric mixer to mix everything together.

In a separate bowl, whisk together the custard powder, flour, and cocoa powder.

Add the cocoa mixture to the butter mixture and stir until the ingredients are combined.

Add the vanilla essence and mix it through. The vanilla adds an extra layer of lovely flavour to the cookies to complement the chocolate.

Once the biscuit dough is ready, take small chunks (of about 1-2 teaspoons worth) of mixture and roll it into balls. Place the cookie balls onto the baking tray, then press each down lightly with a fork. This will flatten the cookies down slightly and give them a three-pronged impression on top!

Once all of the biscuits have been flattened with a fork, bake them in the oven for about 15 minutes, or until the cookies are cooked through. The best way to test this it to pull one of the cookies out of the oven and break it in half to check.

When the biscuits are cooked, take them from the oven and let the cookies cool on their baking trays. Pop them into a cookie jar, and you're good to go!
