How To Make Easy Basic Chocolate Cupcakes

Cupcakes are one of the cutest, most delicious treat out there - an what better than a chocolate flavoured cupcake? This recipe is really easy, to make a basic cupcake that is light and fluffy - a sure fire way to make a delicious, chocolatey snack! These cupcakes only use cocoa, rather than chocolate, so they can be made even if there's no chocolate in the house, making them a fantastic go-to treat when the chocolate runs out (no!)

Chocolate cupcakes also make a great addition to a lunchbox - just pop a few into a snap lock bag and take them to work or school for a sneaky snack during the day.



What you need

100g butter
2/3 cup caster sugar
1 teaspoon vanilla essence
2 eggs
1 cup self raising flour
1/3 cup cocoa
1/2 teaspoon bicarbonate soda
1/2 cup milk

How to make it

Preheat the oven to 160C. Line a cupcake tray with patty pans.

Beat together the butter, caster sugar and vanilla until they are combined and creamy.

Add the eggs, and beat those in as well.

In another bowl, whisk together the self raising flour, cocoa powder, and bi-carb soda. Add half of this mixture to the butter bowl and stir everything together.

Add half of the milk, mix it all in, then add the second half of the flour mixture - stir to combine - and finally add the second half of the milk, then stir until everything is combined.

Spoon the mixture out into cupcake patty pans. The mix makes 12-16 large cupcakes, and about 20-24 small cupcakes (to make these, use mini patty pans and a mini cupcake baking tray - they're really cute!).



Bake the cupcakes for about 15 or 20 minutes, or until they are cooked through when poked with a skewer.

Take them out of the baking tray and let them cool on a wire rack. After they are cooled, store them in an airtight container.

I tend to leave these cupcakes without icing because they keep a lot better that way, but they also taste great with some chocolate icing. Even peanut butter icing tastes great.

To make some peanut buttercream icing, beat together the following ingredients:

1 cup icing sugar
1 cup smooth peanut butter
1 teaspoon vanilla essence
80g butter
1/2 cup milk
