Choco Mocha Muffins
This is a muffin using cocoa, coffee, choco chips and dry-fruits. Get ready for a total chocolaty indulgence
So mouthwatering
Preparation Time: 20-30 minutes
Baking time: 18-22 minutes (Microwave takes 2-3 minutes)
Servings: 15 to 18 depending on size of mould
Ingredients
Dry ingredients
1 cup All purpose flour
3/4 cup Whole wheat flour
1/2 teaspoon Baking powder
1 teaspoon Baking soda
1 cup Brown sugar
1/4 cup Cocoa powder
1/4 teaspoon Salt
Wet ingredients
2 large eggs
1/2 to 1 teaspoon Vanilla extract
1/2 cup Buttermilk
1/4 cup Coffee in water
1/2 cup Neutral cooking oil (e.g canola oil, corn oil)
Other ingredients
1 cup Chocolate chips (dark, milk or white or a mix)
1/2 cup dry fruits of your choice (I have used raisins, chopped almonds and cashews)
Method
To make buttermilk at home- Take 1/2 cup milk (whole or skimmed) and add 1/2 tablespoon vinegar or lemon juice. Leave aside for 10-15 minutes.
To make coffee water- Take slightly warm water (1/4 cup) and add instant coffee powder. Mix well and keep aside.
Sieve the flours in to a deep vessel. Add all the dry ingredients (except sugar and salt) and sieve them. Mix together. Break lumps of brown sugar with fingers and add.
If using sweetened cocoa powder, you may reduce the amount of sugar.

Preheat oven to 190 degrees Celcius (not needed if using a microwave). Grease the muffin tray or line with paper cups
Add the chocolate chips, nuts and dry-fruits. You can omit the nuts and fruits if you don't want it.
In another bowl, whisk the eggs and vanilla together. Use a fork or hand whisk. Over beating can spoil the recipe. Avoid the electric beaters.
Wet ingredients
Now add the oil.
Add the buttermilk and coffee water and mix together.
Pour the wet ingredients in the dry and fold together. Take care not to over beat the mixture.
Consistency is thicker than cake batter
Pour in to the moulds and bake on 190 degrees Celcius for 18 to 22 minutes. If using a microwave, micro on 80% power for 2 minutes and half a minute more if necessary.
Fill little more than half
Check by inserting a toothpick in the center. It should come out clean.
Eat as is or decorate as per your choice
Leave on cooling rack before you dig your teeth into these sinful little muffins.
