Hildon Water Chocolate Truffles

If you've ever cooked with chocolate, then you know the golden rule. Don't get water on it.If you do, the chocolate with seize up.

So quite how Demarquette achieved these I'm not quite sure. But whatever method they used, they're onto a winner.

The difference between these truffles compared to traditional truffles is that the creamy ganache centre has been replaced by pure water, sourced from the chalk hills of Hampshire.

The filling still looks like a ganache, but once you bit into it, feels like you are drinking water, as you get a mouthful of natural spring freshness. Most chocolates dry out your mouth if you have too many, but these are hydrating.

Boxes can be bought in two sizes: 18 truffles for £25 or 36 truffles for £45.
